    Chosing the right knife is where professional cooking starts. When I see TV stars cooking on TV and they obviously don't know which knife to take I switch the channel immediately.

    the right knife is the one you can afford and not worry if breaks, its how to keep it sharp thats important all the bla bla is horseshit if knife is dull

    Probably said already but you have any idea how to use a Japanese knife? Good job wrecking your Shun knife by hacking straight down.

    Not bothering to read previous posts so maybe I'm the tenth person. But hacking straight down ? Ignorance re: Japanese vs German knives. I love Shun. Also some German knives. Apples and oranges.

    Am I the only one who hates how granton blades look? I have gotten along fine without them, and have never had most food stick to any of my blades.
